Dish Info
Roasted Pig Stomach is a traditional Pennsylvania Dutch dish that surprises with its savory flavor and unique presentation. The stomach serves as a "delivery vehicle" for a delicious stuffing made with ground sausage, diced potatoes, chopped onion, and shredded cabbage.
INGREDIENTS
1pig stomach – 1quart water – 2teaspoons salt – 1 1⁄2lbs ground sausage (bulk not links) – 1quart raw potatoes, diced – 1onion, finely chopped – 2cups cabbage, shredded – 2tablespoons salt – 1teaspoon pepper
STEPS 1
Preparation: Remove the inner lining from the pig stomach and discard. Rinse the stomach well and soak it in salted water for 2 hours to cleanse it.
STEPS 2
Stuffing: Mix together the ground sausage, diced potatoes, chopped onion, shredded cabbage, salt, and pepper to create the flavorful stuffing.
STEPS 3
Assembly: Drain and rinse the soaked stomach, then fill it with the prepared stuffing mixture. Sew the openings and holes securely with cotton thread to keep the stuffing intact during roasting.
STEPS 4
Roasting: Place the stuffed stomach in a roasting pan with water covering the bottom. Bake at 350°F for approximately 3 hours, adding water as needed to prevent the pan from drying out.
