This viral baked feta pasta dish combines roasted tomatoes and tangy feta for a simple yet irresistibly delicious meal, perfect for any pasta lover.
– 2 pt.cherry or grape tomatoes – 1shallot, quartered – 3cloves garlic, smashed – 1/2 c.extra-virgin olive oil, divided – Kosher salt – Pinch crushed red pepper flakes – 1(8-oz.) block feta – 3sprigs fresh thyme – 10 oz.pasta – Zest of 1 lemon (optional) – Fresh basil, for garnish
Step 1 - Preheat the oven to 400°. In a large ovenproof skillet or medium baking dish, combine the cherry or grape tomatoes, quartered shallot, smashed garlic, and all but 1 tablespoon of extra-virgin olive oil.
Step 2 - Place the block of feta into the center of the tomato mixture and drizzle it with the remaining 1 tablespoon of olive oil. Scatter the fresh thyme sprigs over the tomatoes. Bake for 40 to 45 minutes,
Step 3 - Meanwhile, in a large pot of boiling salted water, cook the pasta until al dente according to package directions. Remember to reserve ½ cup of pasta water before draining.
Step 4 - To the skillet with the roasted tomatoes and feta, add the cooked pasta, reserved pasta water, and lemon zest (if using). Stir until everything is well combined.
