1(14-oz.) block extra-firm tofu, drained – 2cloves garlic, grated – 1" piece ginger, grated – 2 tbsp.low-sodium soy sauce – 1 tbsp.Sriracha – 3 tbsp.toasted sesame oil, divided – 2 tsp.rice wine vinegar – 2 tbsp.packed brown sugar – 1 1/2 tbsp.cornstarch – 1/4 tsp.baking powder – 1green onion, thinly sliced, for garnish – Toasted sesame seeds, for garnish

STEPS 1

Begin by carefully patting the tofu dry between doubled layers of paper towels on a cutting board. Gently press down to remove excess moisture without cracking the block. Once dried, proceed to cut the tofu into 32 equal pieces by halving it laterally and then creating a 4x4 grid.

Prepare the marinade by whisking together grated garlic, ginger, soy sauce, Sriracha, 2 tablespoons of sesame oil, rice wine vinegar, and brown sugar until the mixture is smooth and well-combined. Remember to set aside half of this marinade for later use in glazing.
