A hearty holiday dinner featuring crispy potato latke wedges served alongside tender applesauce-braised chicken thighs.
INGREDIENTS
– 3 lb. skinless, boneless chicken thighs – 2 lb. russet potatoes, shredded – 1 small onion, shredded – 2 Tbsp. matzo meal – 1 large egg – 3 Pink Lady apples – 1/2 cup dry white wine – 1 1/2 cups unsweetened applesauce
INGREDIENTS
– 4 sprigs thyme – 2 Tbsp. fresh lemon juice – 1/4 cup chopped parsley leaves – 2 tsp. lemon zest – Kosher salt, freshly ground pepper – Cayenne pepper – Vegetable, canola, or grapeseed oil
STEPS 1
Season chicken with cayenne, salt, and pepper. Let sit for 10–15 minutes.

Wring out excess moisture from shredded potatoes and onion using a clean dish towel.

In a medium bowl, whisk together matzo meal, salt, pepper, and egg. Add to potato mixture and mix until evenly distributed.

Cook potato mixture until edges are browned, then broil until golden brown.

Cook chicken until golden brown on both sides, then cook apples in remaining oil until caramelized.
